Pizza Sunday

After an afternoon of walking around in taka, i decided that we should have a casual stand around dinner of pizza/salad since there was no time to defrost food.
So pizza it was!!Shaped like an amoeba but very yummy coz was trying to get it to be the thin crust wonder!

This one is topped with Ham, mushrooms,lots of mozzerella and cheddar cheese, with a hint of blue cheese for that ultimate savoury kick! I made another one (not in picture) with ham and mozzerella/cheddar cheese.
The Crust is extremely easy to make:
(to make 3 thin crust pizza)
200g plain flour
2 tsp sugar
1 pinch of salt
1 tablespoon of vegetable oil (i use canola)
1-2 tsp of yeast
enough warm water to make a dough
1) Mix all the ingredients up into a soft dough
2) Pop your dough into a deep bowl and cover it with a damp cloth
3) Let the yeast do its wonder for an hour (or until the dough doubles in size)
4) Knead it thin if you like it thin, and start spreading your ingredients on top of the pizza
You would need 1 cup of red pasta sauce, 300 gm of mixed mozzerella and cheddar cheese and any other toppings you like!
Bake it at 200 deg.c for around 10 mins.

Butter Milk Panna Cota

FOUND IT!!! i am going to try it- looks pretty easy-
already bought the gelatin from CF today- will go for the heavy cream and the buttermilk tomorrow (apparently, butter milk is suppose to be less fattening!) oh well who cares!?


Buttermilk Panna Cotta with Blueberries Recipe
Serves 6
Ingredients

2 teaspoons (1/4 ounce envelope) powdered gelatin
2 tablespoons water
3/4 cup heavy cream
3/4 cup sugar
2 cups buttermilk (shake carton or bottle well before measuring)
1/4 teaspoon vanilla
1 1/2 cups blueberries
1 tablespoon sugar
3/4 teaspoon grated lemon zest
6 mint sprigs (optiona)
Preparation

Spray the insides of six 6-ounce (3/4 cup) ramekins or souffle cups with nonstick cooking spray. Place gelatin in a small bowl and cover with 2 tablespoons water to soften, about 5 minutes.
In a medium saucepan, whisk together cream and sugar and place over medium high heat. Stir until sugar dissolves and bring mixture to a good simmer. Remove from heat and stir in the gelatin until it has completely dissolved. Then stir in the buttermilk and vanilla. Transfer mixture to a large (about 4 cup) measuring cup with a spout and pour into the prepared ramekins.

Place ramekins on a baking sheet or tray, cover with plastic wrap, and chill until completely set, 6 hours or overnight. (Panna cottas can be made 2 days ahead. Keep covered and refrigerated.)
When ready to serve, toss blueberries, sugar and lemon zest together in a medium bowl. Have ready 6 dessert plates. Remove panna cottas from refrigerator and let stand at room temperature 10 minutes. To unmold, run a sharp knife around the inside edge of each ramekin. Fill a cake pan or pie plate with very hot water and dip the bottom of each ramekin in the water for about 10 seconds. Invert each ramekin onto the center of a dessert plate and gently lift off the dish. If panna cotta doesn't unmold, repeat dipping bottoms of ramekins in hot water.) Garnish each serving with blueberries and a mint sprig (wow so glam!!!)

Gals night out!

Friday night- i had the most awesome GALS night out- sooooo productive yakking away all night!! Though i had a blardy stiff neck, and sore throat( kenna acupuncture that very day-ouch), i enjoyed myself v much coz it was QUALITY yakking..so much more productive than our usual hubs and kids get-together, althought that was fun too.
So the first part of the evening was dinner at manpuku- food was so-so and very disappointing, desert was dipping below average- very disappointing- shokudo is much better coz even tho it has so-so food, they have happening jap dessert and that is just SOOOOOO important for a gals night out right?? but the yakking was fun :) too bad Chai gal had to leave early coz her hubs came to pick her up :((. the REAL deal was AFTER dinner, our very preggo XS. Des and moi decided that this place was just nonsense and the desert was so terribly disappointing that we CRAVE real dessert. At 11pm- the only place was MAC- yes yes- fluffy fluffy white vanilla wonder soft ice-cream with hot fudge that XS was craving for. I decided to go for the cone coz i had sore throat so must avoid heaty stuff like chocolate fudge right?? hehehhee

Anywayz, the MacDonald's after dinner dessert and yakking was the REAL DEAL!! we had a ball, laffing and giggling like old school gals again- our conversation went from toilet flushing philosophy to switchin careers to rubbish stick between laptop keyboard.... it ended with us sharing decaff ice latte and moi here had to rush back coz boob were like bursting - haven't pumped for 6 hours- enough to kill!

Zabos, we have to do this before XS pops ok!!! wooohoooo BFF!!

Rare, rare that i get some "me" time on a monday night (technically, its tuesday morning since it is 12.44am)- read a couple of work emails- doddled over some online recipes on panna cotta. Why you would ask...coz last Sat, hubs and I discovered this new italian wonder place along F-kel....Fat juicy italian meatball sandwich & very yummy looking pizza- since we juz had our lunch, we decided that we will come next week but we order a panna cotta with brandy raspberry sauce with cappucino and latte. Although i only took 2 sips of the latte before it went splashing down on my new LV (thank god it was unscathe) - both hubs and I fell in love...with the panna cotta- velvetly, milky texture coupled with the raspberry sauce. It slipped through my throat!! i was breathless...in fact i looked so contented that this angmoh asked me what am i eating. I really love good food la and it shows all over my face....

Anywayz, it kinda inspired my desire to make panna cotta- YUMZZZ...

Before zipping off to ZZZ land, i decided to read my fav blogger Ms D-tchess.. and was so pleased that Ms D posted my fav sesame street video from youtube! check it out...*singing* Sunny day..lalalalalalala (SStreet opening song..hehehehe) BTW this one is GOOD!! what a good way to learn the alphabet!

The D- boy's birthday!!

Part 1 of D-boy's birthday party on June 7 (not actual day hor)

D-boy is celebrating his 7th birthday tommorrow! The plan is Bowl, Cake cutting then a splash-about at the water theme park at the club. There will be a medley of heart-clogging fried party stuff for the guest, as well as 5 gallons of ribena...hope that is enough. The office manager cum BCP cum CSR lead in moi's office gave fantastic suggestions eg: Buy a gold, silver n bronze trophies from queensway & engraving it with D's 7th BD NATIONAL bowling competition AND create a D's 7th BD NATIONAL Bowling competition t-shirt personalized with names of each guest. WOW WOW..so glam ...i say..SET! Wonderful plans, but not executed coz the (also) Corporate Goddesss need to go show face and rah rah at a sales directors forum in Batam..*bleah*... Also on hindsight, the trophies are not such a good idea for kids this age coz 1) they are not matured enough to lose gracefully (i am not about to comfort kids who did not win any trophies 2) insufficient bandwidth to execute ...hehehe

ok stall these plans for next year ok D-boy! For now- BOWL AND SPLASH AWAY !! WOOOHOOOOO..PART 2 will be June 10- THE ACTUAL day....where we will go see his cousins at the zooooooo..
